Sweet Potato Latkes (cholesterol-free)

6 medium sweet potatoes
6 ounces egg substitute
4 scallions (diced)
2 tbsp. honey
1/4 tsp. cinnamon
1/4 tsp white pepper
1 1/2 tsp salt
4 tbsp. flour
1 tsp. minced garlic
1/2 tsp. baking powder
Oil for frying (canola oil recommended)
Makes about 20 latkes
Shred potatoes in food processor ( It is not necessary to peel the potatoes.)
In a large bowl combine potatoes, egg substitute, scallions, honey, cinnamon, pepper, salt, flour, and garlic.
Work mixture with your hands until thickened.
Form into 2-3 ounce patties and press thin.
In a large frying pan, heat 1/4 inch of oil until hot.
Fry patties until golden brown on both sides.
Drain on paper towels.
Serve hot.
